The Philippines
Lechon, a beloved dish from the Philippines, is renowned for its flavorful meat and crispy skin. Lechon means “roasted pig.” The way it is made in the Philippines is with a whole pig cooked on a large stick over a pit filled with charcoal. The roast pig or lechon is a sign of celebration in Philippine culture. Whether it's a birthday party or a religious festival, it will always be there—glistening golden brown—right at the center of the dining spread.

Lechon, derived from a Spanish word for roasted suckling pig is one of the most popular dishes in the Philippines. The slowly roasted suckling pig is usually stuffed with lemongrass, tamarind, garlic, onions, and chives, and is then roasted on a large bamboo spit over an open fire.

What is Filipino Lechon? Lechon is derived from the Spanish word leche, with translates to milk. The origin of the dish used small young suckling pigs that were still nursing milk from their mothers. As Lechon's popularity increased, cooks moved to use bigger pigs.

Lechon is Philippine fiesta fare, served at Christmas and other special occasions such as weddings, family reunions and large parties, where its presence affirms the status of both host and guests.

Grilled to perfection, mouthwatering flavor from the pig's meat, and a perfect crunch to every bite. It is a taste and experience that no person will ever forget.
